Playing With LIME Pepper

So, I got my new toy, LIME PEPPER (^^) 
Some creations with my new toy.
See through daikon skin with bloody tomato sauce.  A sprinkle of lime pepper. 

Brown rice with salty kelp & daikon noodle saturated in Japanese plum sauce.  A sprinkle of lime pepper.

Wild Watercress at Fairy Spring in Sedona, AZ

 Somewhere hidden in Sedona, AZ.  There is a place called "Fairy Spring"
You can find this place with a help from a famous guide nicknamed "fairy."
Abundance of spring water - so clean and cold.
Look!  Naturally, lots of wild watercress grow in a place which is blessed with pure and cold water!!
Taste of wild watercress?  Sweetness and bitterness coexist - it is like eating purified water.

Back in Hell's Kitchen.

Of course, it was nearly impossible for me not to think of playing with watercress.  So, here comes...

Pasta - watercress, mushroom, garlic and red pepper.  Finished with Balsamico.
Salad- watercress with (1) tomato stuffed with olive and tofu mayo, (2) smashed soy with shallot, carrot, and basil, (3) olive roasted apple. 
Sweet dressing with honey and miso.

Meditaiton In Kitchen = Making Udon Necklace?

One of my favorite cooking books I recently picked up at NYPL is Mayumi's kitchen - macrobiotic cooking for body and soul.  Mayumi is an expert in Macrobiotic way of cooking = life.  She is a personal chef of Madonna's.  Her recipe is healthy, simple, veggie-based, and dynamic - which is easy to follow in NYC with a trip to Japanese grocery store a few times a month.

I added more of my inputs to her wonderful recipe for homemade udon - to customize for taste buts in Hell's Kitchen.


Noodles are made of 50% wheat and 50% white unbleached flours.
 Interestingly, her recipe shows that noodle to be shaped like a necklace. (^^)


"Cooking = Meditation"
I enjoyed my meditation when I was making udon necklace in my kitchen. 
I found myself breathing deep and relaxed as I was ONLY focusing on making simple Udon.
Released from noise of Hell's kitchen.
How is my mind and soul doing? 
Light and healthy!
How was the flavor?
Honestly, it came out rather too chewy if you expect the texture of regular Udon.
(^^)   

 For soup base, simmered a piece of seaweed (kombu) and dried shitake mushroom.  Then, added soy, sauce, mirin, sake, glazed ginger, and finally a few drops of extra virgin olive oil to bring out mildness in the soup.

Habanero Bento To Get Through Thursday Afternoon In The Office

Habanero Chili gets you HIGH instantly. 
This is a perfect lunch for someone who has multiple meetings and/or calls on Thursday afternoon.
Please check Outlook and see if you have multiple meeting requests hanging without being accepted by you... (^^)

One more day to Friday!
1. Habanero Chili Bowl
2.Leek salad with Tofu Mayo
3. Leek glatin with soy milk
4. Brown rice



Tofu Mayo
To make Tofu Mayo - steam cook silken tofu for 10 min.


Then, blend Tofu with mustard seeds, olive oil, apple cider vinegar, palm sugar, caper, and salt.

Leek salad with Tofu Mayo

Cook leek in boiling water till it is tender
Drain leek, then mix with chopped onion and Tofu mayo.
Leek glatin with soy milky cream
Sautee leek and garlic with olive oil, then simmer with soy milk.  Add flour for thickness.


Add panko and peppers.  Cook in the oven 350 degrees until panko gets crispy.

If you have a chance to visit Sedona, AZ, try "Mago cafe"! 
Korean "organic" "vegetarian" restaurant in the middle of red rocks.
This is place serves fresh organic veggies with absolutely no trace of MSG!
Healing Chakla Bowl $11.95
 My favorite is... "Healing Chakla Bowl"
Yes, it heals your Chakla (^^)
It's vegan Bi-Bim-Bap.  Fresh raw veggies on nicely cooked brown rice.  With crispy seaweed sprinkled on the top and spicy sauce.
 
No question asked - Kimche
 Rather crunchy kimchee - light and tastes more like salad. Refreshing!
Soon Du Boo Gighae
 Spicy Tofu soup with had a trace of gladed ginger... which helped me detox all evil in me...
Mago cafe is located on the top of "spirituality" shop where you can take aura pictures, enjoy psychic readings, buy some crystals - it is SO Sedona (^^), a small town filled with psychics, artists, musicians.
I am not sure about condition of my Chakla (^^), butI felt so refreshed after a nice meal at Mago cafe. 
Now, time to hit a bar?

Listening To Your Mind, Body and Soul

 Back in NYC. Just returned from a trip to Sedona, Arizona.

In Sedona, AZ, I meditated in Birthing Cave - where your wishes come true if you pray with a "right" set of mind.  
What is the "right" set of mind?  It is to pray in "positive" mind set.

You may ask me, "do you really believe in that?" 

Meditation only lasted a few minutes...

Meditation in the cave reminded me of how I met the Universe upon birth.  I felt a sense of love and appreciation to the Universe.  I am not alone.  I was born with purpose!

I want to be happy / healthy by practicing what my mind, body and soul tells me to.
and
I want to share my experience with rest of the World!
...

Back in NYC.
Simple breakfast.  A full of natural flavors.  Vegan.  Absolutely NO chemicals.

Humble? but luxurious.   

Rice soup cooked with veggie stock and Japanese plum. 
Celery with olive oil and balsamico.
Carrot and celery - kimpira syle.

My mind body and soul?
Very happy! (^^)
