Day 1

Remedy:
Replace lunch with a vegetable-based nutritious bento box. Organic and local where possible.

Today's bento:

Japanese brown rice and madagascar red rice


Soup: Miso soup with Chinese vegetable. Soup stock made with seaweed and dried shitake mushroom.
Side 1: Whole wheat pasta with Japanese sake-infused white cream source. Topped with a tiny red pepper. Sakekasu (a residue from sake-making) cooked with white onion, soy milk, wholewheat flour, and a hint of sesame oil.

Side 2.1 : Soybean cooked with seaweed and shitake mushroom. Soybean snack simmered with seaweed and dried shitake mushroom which were used to extract "umami" flavor. Slowly cooked with soy source, sake, and mirin.

Side 2.2: Sauteed Chinese vegetable with extra virgin olive oil and balsamic vinaigrette. Cooked with high heat followed by steam cooking.

Side 2.3: Thinly-sliced daikon with white onion. Soy flavor. Dried Kiriboshi daikon, white onion and seaweed simmered with soy source, sake, and mirin.
