Spoiled in BKK.

Just returned from Bangkok where we had awesome cooking lesson with the TV celebrity chef Je Ngor. Still struggling with Jet lag. No motivation to cook YET. I was so spoiled in BKK where cooked food is everywhere.

So here goes - making fried shallot Fried shallot can be used for addition to noodle, congee, salad - pretty much anything.

  1. The Project leaned the following lesson from today's experiment:

    1. Don't be cheap - use a plenty of veggie oil for even distribution of heat to shallot.
    2. Don't be afraid - of using high heat.
    3. Oil? - consider the use of oil peanut oil. The experiment used olive oil, but it resulted in rather saggy texture. It must be crispy.
