A Vegan Gift Package From Hells Kitchen

No white sugar used to bring out sweetness of the ingredients. Please feel free to modify the flavors with your creativity.

Paprika with Ginger and Bitter Chocolate

Ingredients:
2 paprika, orange and yellow
Feel good portion of ginger root
A half of organic bitter chocolate
Legal amount of dry white wine
Honey, as little as possible

This sauce has an attitude. Dont wanna be considered sweet just because its chocolate.

This will be great with salty and/or protein items like fresh tofu, grilled tofu, white fish, lean meat

Plum Jam

Ingredients:
5 plums
1 lemon
2 tbsp honey

Enjoy with toast, pancake, tea. Or freeze it and drop it in ice cold vodka for a plum shot.

Apple Tea Collaboration with Makers Mark

Ingredients:
5 Fuji apple
1 Lemon
3 tbsp pure Honey
Patience
1 shot of Makers Mark

No preservatives with no white sugar added. Only safe ingredients. Pls keep refrigerated.

Chocolate Soy Milk with Makers Mark

Flavored milk at school cafeteria? No!

2cups Home-made soy milk
Free sample of Godiva chocolate (...says "be my valentine")
$0.99 organic chocolate from the 99 cents store.

Simmer all the ingredients in low heat, constantly stirring with lots of patience. Reduce down until it gets sticky Finish off with a shot of Maker's Mark.

Nice with toasts, banana? A filling for a cake? Whatever you wish.

WKED labs in Hell's Kitchen

So many valuable lessons learned from the WKED experiments in Hell's Kitchen.  Results of experiments varied in a wide-range.

Success?  Failure?? 

Theme?

No milk
No egg
No white sugar
No additives

1. WKED soy milk bar.  

 
1lb of soy beans = soy milk + okara 
Let's see what can be made from these... 

2.  WKED Bakery - organic whole wheat bread soy milk from the soy milk bar.  
 Organic roasted chestnuts for $0.99 at the 99 cents store?  Is it expensive or cheap?  First of all, is this really organic?

The first attempt...
Excess water in dough? mmm


 Two flavors - "chest nuts" and "rosemary and olive oil" 
Rating? 2 out of 5 for being over-baked and a lack of yeast.

OK!

The second attempt...
 Rating? 3.5 out of 5 for not enough moisture, probably lack of soy milk. Nice flavor and soft texture.  It was perfect with olive oil, salt, and pepper.  Yummy!

3. WKED Bakely - Organic cookie with Okara and Chestnut
Rating? 3.5 out of 5 for rough texture.  Need to invest in a food processor for further improvement.  Flavor of baked soy beans is nice.

4. WKED natto shop - 1lb of soy beans transformed to Natto (fermented soy beans)
Rating? 2 out of 5.  It did not get enough stickiness because of weak temperature control.

mmm...

Hearty Monday Bento with Home-made Pasta and Soy Milk

It is incredible... 29 degrees in NYC.  Here comes, home-made pasta and soy milk to warm your body and soul!
Heart warming???
Minestrone soup with home-made pasta.  Thx to Jamie Oliver's recipe.
Home-made Ravioli with asparagus and caper in soy creamy sauce.  Topped with special fish sauce with cilantro-tangerine flavor.



Home-made pasta with creamy shallot sauce.  Topped with caper.

 Steamed carrots and Chinese veggies marinated with sesame oil, seeds, and apple vinegar.

Whole Wheat Pasta & Tofu. Hard lessons learned.

Simply inspired by Jamie Oliver's Dream School...
Experiment 1: Pasta-making with organic whole wheat flour

It is not vegetarian as an egg is one of the ingredients. Does anyone know how to make vegan pasta?
No pasta machine available in the kitchen? Just use a can of spray to stretch a dough.

Experiment 2: Tofu-making with $2 per lb soy beans in Korea town.

Cheap! ... So, I thought.
2lbs of soy beans ended up with
6 cups of Okara
4 cups of soy milk
1 pot of Tofu looking substance
Result

Hard lessons learned today:
1. Do not bite more than you can chew: Processing 2lbs soy beans was too much for the small kitchen.
2. Quality rather than quantify: DON'T PLS USE CHEAP SOY BEANS! Cheap soy beans leave too much bitterness in Tofu. You can tell from aroma while cooking - Use organic beans for Tofu-making as Tofu-making reveals true quality of beans used.

Curry Friday! A Food Fanatic From India

A food fanatic from India kindly provided a hearty recipe for what we call vegetable "curry" dish in the Western World.  (In India, curry is not of any one type but they vary a lot.)

 Aroma and steams from mixture of various spices and viggies....

Cinnamon, ginger, garlic, cumin,  coriander, chili powder... etc. 

made the kitchen into a spa!

Spicy Roll with Soy Protein

Found a package of dry tapioca roll paper which has been untouched for more than 5 years.  Why not experimenting to see how 5-year old food can affect human body?  Made Spicy Roll with the paper and digested in the morning.  It actually turned out to be REALLY good.

Yes, I am still alive...

Ingredients:
2 tapioca roll paper
1 cup of okara
2 asparagus, boiled and marinated with lemon and salt
1/2 carrot, chopped
1/4 onion, chopped
1 shitake mushroom
2 clove fresh garlic

Soy sauce
Spicy sauce
Citrus juice (lemon, lime, etc..)

1. Mix okara with  chopped 1/4 carrot, shitake mushroom, and onion.  Put it in the 425 degrees oven until it dries up.  Pour 1/2 tbs of soy sauce and citrus juice once it dried.
2. Put tapioca papers in warm water for 10 - 15 seconds for hydration.  Spread the papers on a dry flat surface.
3. Put a half of (1) on each paper.  Add rest of carrot, boiled asparagus, and garlic.  Add Spicy sauce.  Then roll it up like a Sushi roll.
